My 4 year old son son has moved from a diet of largely waffle, pancakes, bread, chicken nuggets and chips to one consisting mostly of gfcf pancakes, chips and chicken nuggets breaded in gf flour. We are trying to expose him to some scd legal foods in anticipation of a full start on the scd diet. We have mostly eliminated access to grains. So this is what he is willing to eat at this point: Chicken (grilled, no breading... this is progress), steak, hamburger on a plate (with salt), scrambled eggs, and he asks for apples all day. I have started to limit the apples too because I see he is willing to eat them as a meal. He also asks for chocolate flavored almond milk all day, but only gets it once in a while. He drinks juiced carrot, beet, and cucumber.. .sometimes with spinach. He eats cauliflower pureed to look like mashed potatoes. He has shown progress in the willingness to try new and strangely colored foods with varying textures. Previously, he would get nervous and cry at the thought of having to try something. Unfortunately, after his initial bite, he usually says he doesn't like most nuts, fruit, and vegetables. I don't force him to eat because I figure that this is not a good idea. He seems able to hold out and not eat for entire days rather than eat something he doesn't like out of humger. I am concerned about his whole diet being meat and eggs. (Previously it was all bread). Any suggestions for getting him to expand his repetoire? I am hoping that a little familiarity with scd foods, while i continue to learn about the diet will make the transition easier for him once I get a handle on what I should buy and cook. He may need to go through a period of " withdrawal " from the favorite foods he craves. Most kids do eventually accept the new foods. My son loves unsweetened chocolate almond milk, you could start doing regular almond milk with it until all chocolate is phased out. If you do sweetened then switch to unsweetened and add a little honey it doesn't take much to make it sweet I started out with agave nectar which is illegal it never crystallizes and it mixes very well in cold stuff. With honey I mix it with a small amount of milk first then add more. You can still do breading with the chicken: Nut flour crushed fresh garlic salt pepper papkrika dried parsley (all spices to taste) eggs Combine nut flour, crushed fresh garlic, salt, pepper, paprika and dried parsley flakes to taste. The result should resemble seasoned cornflake crumbs in color. Dip bite-sized pieces of chicken in beaten egg, then roll in the nut-flour mixture. Fry in oil on both sides until coating is golden. That comes from the website but I like to add a tiny bit of spinach in my food processor because of his texture issues. --------------------------------- Be a better sports nut! I would try really well cooked carrots, blended up to be like orange mashed potatoes. It's great to hear about progress! My son used to have many issues with textures. When we went GFCF it improved a lot. On SCD he is already gaining language ground very quickly. B.
