Farmers Cheese

I have found two brands of farmers cheese here but I wanted to make

sure they sounded okay. One is a round ball, rather the

consistency/firmness of mozzarella cheese and is made by Wilshire

Dairies. The other one is packed in a plastic carton and has liquid

surrounding it. The liquid is clear yellowish liquid and the cheese

is by Lifeways. I haven't bought this one yet because of the liquid

on it, so I'm not sure of it's consistency.

Do either of these sound okay?

Janelle,

Neither of the two cheeses you listed are legal. The Lifeway is closer

to what your DCCC is going to look like. When we first started SCD, I

accidentally was using Lifeways Farmer's Cheese and it hindered

healing. I believe it contains too much lactose. The basic consistency

of it is what you are looking for. What state/city are you in?

Perhaps someone around you has already found some.

We are in the Lansing Michigan area. The dairy store at Michigan

State University also sells cheese curds - they are dry, can actually

" squeak " against your teeth when you chew them, are fairly salty and

delicious but I had always assumed they were fairly freshly made and I

thought the cheese would need to age some to eliminate the lactose.

Would these cheese curds be what I'm looking for?

I forgot to mention: they are small irregular shaped balls of cheese

(lots & lots of balls make a 1/2 lb bag) and are very dry. They come

in a plastic bag and are yellowish in color. Much larger curds than

in small curd cottage cheese, but easily small enough to fit in your

mouth in one bite. They are just called " cheese curds. "
