Just had to share that I made this last night and had a peice this

morning and it is SOOOOO fabulous. I wanted to make it first and try

it before making one for thanksgiving so I can at least have some

yummy dessert with the rest of my family. But after making this I'm

not sure I'm willing to share;o)

So if you're undecided what to make for dessert, I definitely

recommend it! You have to make the pumpkin butter first, but it makes

a good amount that you can freeze and use later. A bit of work, but

definitely worth it. Off to have my second piece! Yum!

#6.)Pumpkin Butter

Makes 5 half pint jars.

3-1/2 heaping cups pumpkin puree

3/4 cup legal apple cider

2 teaspoons ground ginger

1/2 teaspoon ground cloves

1 1/2 cups honey

2 teaspoons ground cinnamon

1 teaspoon ground nutmeg

Directions

1Combine pumpkin, apple cider, spices, and honey in a large saucepan;

stir

well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes

or

until thickened. Stir frequently.

2Spoon hot pumpkin mixture into hot jars, filling to within 1/4 inch

from

top. Remove air bubbles; wipe jar rims. Cover at once with metal

lids,

and

screw on bands.

3Process in a boiling water bath for 10 minutes.

#7.) Pumpkin Pecan Cheesecake

1/2 cup chopped pecans

1/4 cup honey

2 tablespoons butter, softened

1 cup dry curd cottage cheese or Farmer's Cheese

1/2 cup honey

2 eggs, beaten

3/4 cup pumpkin butter

1 (9 inch) SCD type crust

Directions

1Preheat oven to 350 degrees F (175 degrees C).

2Combine pecans and 1/4 cup honey; cut in butter with a pastry

blender

until

mixture is crumbly. Set aside.

3Beat cheese at high speed of an electric mixer until smooth. Add 1/3

cup

honey; beat well. Add eggs one at a time, beating well after each

addition.

Stir in Pumpkin Butter . Pour mixture into crust.

4Bake for 40 minutes.

5Sprinkle pecan mixture over pie. Bake for 5 additional minutes, or

until

butter and honey melt. Cool on a wire rack. Cover, and chill for at

least 4

hours.
