Guest guest Posted November 20, 2007 Report Share Posted November 20, 2007 My son loves the muffins I make that consists of: 4 eggs fruit/veggie puree cinnamon vanilla Also, pancakes made with: 1 banana 2 eggs cinnamon However, he can no longer have eggs. I hope your son is only off of eggs for a limited time. When 's testing showed a sensitivity to eggs and peanut butter (and to oysters which he had never eaten in his entire life) he only had to be off of them for a couple of months and then we were allowed to try them again. Sometimes i add a little honey and cinnamon. So we were able to have Eggless Almond Flour Bread from pecanbread.com and the cinnamon cookies from Lucy's Cookbook. There's also a recipe in the archives called " spinach crackers " that takes nut flour and spinach, but no eggs. We also relied on bananas and Baked Fruit a lot. I heard it's usually easier for our kids then some other nuts and is lower in oxalates. I hope it works for him. That would be super helpful. I made some muffins with them today. I loved them myself! I remember someone saying their husband thought pecan flour made baked goods taste like chocolate. I agree. I think they do. Someone provided a recipe (sorry I don't remember who) and I tweaked it a bit. Here's the recipe in case anyone is interested in an eggless, honeyless muffin. 1 C. pecan meal your choice of squash puree (about the same amount a banana would make, or you can just use a banana) 1/4 cup pear sauce 1 tsp vanilla This is the egg replacer part: 1 1/2 T. water 1 1/2 Tbl oil (I used 1 Tbl coconut oil, 1/2 Tbl olive oil) 1 tsp. baking soda 1/2 tsp vinegar I put it in paper muffin cups. The original recipe says you can make it like a cake in a 12X12 pan. 350F for between 20 and 25 minutes. They turn pretty dark, but that's just because of the pecans. My daughter, it appears is premanently off egg ( anaphilictic reaction that has not gone away after 1 1/2 years SCD), we'll see there is still hope, but in the meantime I have had to get very creative! Guest guest Posted November 22, 2007 Report Share Posted November 22, 2007 Hi Diane- If the pecan flour works out for you, I make eggless pancakes this way 1 banana ½-1 c pecan flour Pinch salt Pinch baking soda Mash that together, add more flour if it’s really sticky. Heat oil in the pan, I prefer coconut oil. Drop batter by tablespoonfuls. Cook on med heat 10 minutes, gently flip, cook about 10 minutes on the other side. Basically you dehydrate these. My son has been egg free for 8 months, and this is bar none his favorite treat. You could serve them with honey or pear sauce, etc, but my little guy loves them plain.
