pecan flour - need opinions

Several days ago I decided to try pecans for my son. I toasted them and ground

them in my food processor. I call it pecan meal because it isn't like powder, or

flour. It's very tiny peaces. My son seemed to tolerated it okay. I was

thrilled! But tonight his poop was filled with it. I'm wondering if I get the

actual flour if it would be okay. I did also notice after eating some cookies

made with it tonight, his pupils were very large. The cookies had pecan, coconut

oil, cinnamon, baking soda, vanilla, butternut squash as egg replacer. These are

all things he's had before, but he's also had large pupils before that I can't

figure out.We've been on the diet 7 weeks. Any opinions or advice is much

appreciated.

Hi Diane,

You might want to try pecan butter instead of pecan flour. Add some

oil to the blender and mix it very thoroughly.

However, I suggest that you take a break from the nuts.

Thank you Mimi. I will take a break and then try the pecan butter. What kind of

oil and how much to make the butter?

I find that when I make pecan butter it comes out rather soupy just

from its own oils.

If your child still has problems with the nut butter, you will need to

wait longer before introducing it. I know you are eager to move on to

it due to the egg situation, but do proceed cautiously. Healing is

what this is all about.

When I make pecan flour in the food processor it becomes the texture of brown

sugar. There

should be no visible pieces. Try the muffin recipe in BTVC using Pecan Flour and

don't forget

the melted butter. These are delicious!
