I call it pecan meal because it isn't like powder, or flour. It's very tiny peaces. My son seemed to tolerated it okay. I was thrilled! But tonight his poop was filled with it. I'm wondering if I get the actual flour if it would be okay. I did also notice after eating some cookies made with it tonight, his pupils were very large. The cookies had pecan, coconut oil, cinnamon, baking soda, vanilla, butternut squash as egg replacer. These are all things he's had before, but he's also had large pupils before that I can't figure out.We've been on the diet 7 weeks. Any opinions or advice is much appreciated. If your child still has problems with the nut butter, you will need to wait longer before introducing it. I know you are eager to move on to it due to the egg situation, but do proceed cautiously. Diane, When I make pecan flour in the food processor it becomes the texture of brown sugar. There should be no visible pieces. Try the muffin recipe in BTVC using Pecan Flour and don't forget the melted butter. These are delicious! Carol F.
