Guest guest Posted November 24, 2007 Report Share Posted November 24, 2007 OK, so it looks like my son and I will be traveling along with my husband to visit his family in early January. I am already trying to come up with ideas for food. I will likely have to bring everything, and I mean everything, to feed the both of us. I do have several medical grade ice packs and so I am planning to pack up some soft sided travel lunch boxes and probably check them as baggage, but it will probably be 12 hours out of a refrigerator. We will be flying from Los Angeles to Salt Lake City and then driving to Twin Falls, Idaho. Any suggestions? We're in stage one and will be in the stage 2 at that time. I'm thinking of baking the chicken nuggets that someone talked about, and frying up a ton of carrot pancakes, and bringing jarred legal applesauce. The egg " bread " keeps well too. Maybe I can bring pureed squash and cooked hamburgers? I think meat will be the hardest part. I don't think I can only eat eggs for four days, LOL. We will be trying almond butter soon so if that goes well muffins would be easy too. We will get a fridge in our motel room at least. I am afraid to cook at his family's home as everything will be contaminated with gluten, sugar, and who knows what else. Any suggestions anyone has would be appreciated. B. Guest guest Posted November 25, 2007 Report Share Posted November 25, 2007 Flying, I don't know how your son will do but I would call the airlines and explain you have an autistic son as if he acts up you can be kicked off the plain as you board. Not fun. I took a trip back east and packed the melatonin it relaxes him and puts him to sleep. You could order some stuff and have it sent there to your family in Twin or have them buy some stuff. I was born and raised in Twin (no longer there) and it has progressed but not sure if they have any really good places to find food. Pack what you have in a cooler with icepacks that are reusable. The ESD in our area has no fridge and no microwave so we have to get creative being on SCD. We find that muffins work really well for travel. Then it is just a 3 1/2 hour drive to Twin from there and you will not have to take much on the plane with you. I would call the store ahead of time for specialty items, for me I would see about unsweetened almond milk, check ingredients as some has tapioca and potato starch. I've never seen a starch free almond milk but my son doesn't like it by itself anyway. B.
