On top of that I put the meat (cooked in sauce), cheese (or not), tomatoes, onions and olives, and serve it as an open-faced tostada. The secret is the sauce. I take one dried California chile per person. I take off the stems and scrape out the seeds, the cook it until floppy in a little water. Then I put the chiles in a blender and blend. I strain it all through a fine mesh colander and pour that over the meat as it is cooking. When it has cooked down to a thick sauce, that's when I serve it. Guest guest Posted December 4, 2007 Report Share Posted December 4, 2007 Super easy tortilla recipe: shred cheddar cheese (I use about 6 ounces). Put in a pan, preferably nonstick, over medium heat. My dd likes the cheese sprinkled with dehydrated onion pieces, but this is optional. Cook until cheese is evenly melted and brown at edges. Wait until cool to remove from pan. (Put pan in freezer if child is very hungry!). Slide onto a large plate, fill, fold and blot oil from the top.
