I use enough oil to cover the carrots completely. Make sure the oil is hot before adding the carrots. There was no set time on how long it took because it depends on the temp. of th eoil and amount of carrots you use. I fry them until they turned the colour of crisp bacon http://pecanbread.com/new/recipes/carrotchips.html I fried them in corn oil.
