I tried steamong julienne carrots yesterday and it took forever and nobody ate them. (And I burned the pan!) So I am giving the muffins that were mentioned a shot with using carrots. Carrots do that, and everyone who cooks has burned their pans at least once. If you steam them again, check them often and keep the water level consistant. Easier is to use a steamer basket (cheap at the market or target), or even a rice cooker. You can do just about anything with carrots. You can boil them, grind them up in meat loaf, or juice them for drinks. All the water boiled away from my green beans one day when I wasn't paying attention. I figured they were covered and they would be OK. That didn't work. LOL.
