Now what?

My son's been on SCD for a month, and we're still having a hard time

getting into the swing of things.

He's seven, and he's been GF/CF for six months, with suspected celiac

disease, but the diarrhea was still awful. So we've been on SCD, and

his bowels are much better, but we've had two big screw-ups. One was

because I let him have a bite of a snack bar that had nuts and sugar

in it, and he ended up pooping in his pants while playing with

friends, which just about killed him with the embarrasment of it.

And yesterday, he had a bad headache, so without thinking, I gave him

a couple droppersful of children's Tylenol, which apparently has a lot

of sugar in it, because he's spent all day today in the bathroom.

This just sucks.

What do we do now? Keep going? We're desperate for him to gain weight,

so the nutritionist that we're working with put him on a shake

everyday from avocado, coconut milk, honey and a banana, even though

those things are pretty advanced. Up until now, he's tolerated it very

well.

Do I go back to intro and slowly work back up to the shake, or can I

just go on like nothing's happened?

What I'm really hoping for is the day we can add in nuts and beans. My

poor guy's starving to death right for some baked goods, and if I

could do nut flours he'd be much, much happier.

I don't really even know what answers I'm looking for. Just some moral

support, I guess, and a promise that this really does work...

Hi, Meagan,

Thank you for your great post about chicken/meats.

Now, for SCD to work for your son, you have to have what Elaine called

" fanatical adherence " . No more small (or large!) bites of snack bar.

Maybe try an herbal wrap for the headache before reaching for the

Tylenol. Or get compounded Tylenol or suppositories. Or get a pill

cutter and use a portion of an adult Tylenol where you at least are

not giving all the corn syrup.

Your shake is not *that* advanced--but what kind of coconut milk? I

hope it's not store-bought. That would not be legal.

To make the shake less advanced, leave out the coconut milk and add

some coconut oil. If weight is a huge issue, then I don't think you

should go back to the intro right now. Maybe you can do it later when

weight is better. Just keep with the legal shakes/smoothies. Try to

put healthy oils in lots of stuff. Serve a good amount of avocado,

winter squash, and banana. You can put avocado in egg bread,

meatloaf, etc.

Hi Meagan,

Well, with my son, I'm not sure because we did not

have any infractions like those. But we did have

accidental infractions that resulted in instant

diarrhea. However it did not set us back.

I think had some good suggestions. The coconut

oil instead is a good suggestion.

But, keep in mind that nut flour is a stage 3 food,

but some nut butters can be tried in stage 2. You can

bake things with nut butters like brownies. We

recently introduced them with my son and they went

over well and he is tolerating them.

Hi! We do the nut butter muffins for my son and he loves them. I

sneak other veg. into them as well (so he gets fruit and veg. in his

muffins). For example, I made a batch last night with about a cup of

homemade almond butter, 1 egg, 1 ripe banana, a whole zucchini peeled

and grated and about 1/4 c. of pureed carrots (that had been cooked 3-

4 hours -- I freeze tons of this puree to have on hand). I used

about 2 tsp. of cider vinegar and a tsp. of baking soda (more than

the recipe called for). They worked beautifully. The cahsew butter

muffins recipe on pecan bread can be used to make cakes/loaves as

well.

Kim,

Can I ask how you make the homemade almond butter? I'm

only buying all natural kids at Whole Foods and I

would like to make my own, but I've heard conflicting

reports as to how to get a good creamy texture. I only

have a blender but I've heard I really need a food

processor. What do you think?

Definitely a food processor -- I actually burnt out the motor of my

nice kitchenaid blender by trying to make almond butter in it. I

just put almonds in the food processor and turn it on. then I slowly

add oil and let it keep blending. No precise amounts I just do it by

look and it does take a few minutes to really blend. It doesn't look

like the all natural ones at WF (that is what I used to use before

SCD) -- it has a much lighter color, but it tastes good and works

well in the muffins (not sure if it doesn't look the same b/c I am

not doing something right or b/c I am not a big production line with

heavy duty equipment!). I haven't tried it in sandwiches b/c I have

yet to find a bread substitute Henry likes (we will have to wait for

the nut flours!). HTH, Kim

Hi Kim,

I almost did the same thing, but with my Kitchenaid

coffee bean grinder (I used it to make nut flour

pre-SCD. It almost worked (it was close to nut butter)

but I almost killed the motor.

Now I have to find a reasonable food processor. But

thanks for the tip. Do you use blanched almonds or

regular raw ones that are not blanched?

: I use blanched almonds that I either buy blanched or blanch and

de-skin myself -- when I do the blanching I found, thru trial and

error, that it helps to then let the nuts dry out a little before

making the butter -- extra water made a weirder textured almond butter -

- still totally useable, just different! Kim
