cooking with alcohol to Margaret and others

Margaret,

I think that all depends on the person, but I myself, do not injest anything

with alcohol. My specialist says it burns off and should be fine, but if your

pancreas is sensitive, then it can effect you....just the flavor of it.

I do not have to go so far as to not have a nibble or two of cookies or cakes

with vanilla in them, but I do not drink raw vanilla like in a fat free milk

shake. Also I do not have to worry about mouthwash with alcohol in it or even

purfumes, but I understand some people do.

This is why I haven't made my spaghetti sauce. Not willing to take the chance

of an attack or intense pain, just for some sauce, even if it is the best in the

world, in my opinion and others who have tried it! :-)

I think the choice is up to your pancreas.

If its boiled long enough to remove the alcohol isn't it OK?

My pancreas says just the smell is enough to make me want to vomit

(<G>) So far all I've been able to tolerate is bland, very

bland " basic " foods (rice, potato, turkey, fat free cottage cheese,

fat free pudding, bread, bananas applesauce...)so all that " sautee with

wine " stuff is going to have to stay a theory for me!

here is something that may help with your sauce.....give it a shot

2 cans of Italian tomato paste

add water to the desired consistency

10 to 12 gloves of garlic

2 table spoons of wine vinegar

1/8 cup of extra virgin olive oil

Half of a small onion

3 tablespoon of oregano

3 tablespoon of basil

2 teaspoons of lea and perrins

3 tablespoons sugar

add all the ingredients to the sauce and let it slow cook for about 40 mins of

so and then make then do what you normally do with your spaghetti......it will

turn out awesome.....let me know what you think

I hope this finds you and yours well
