HTH, Mimi The Squash buttons recipe is as follows: 1 large baked acorn squash (about 1 1/2 to 2 cups) or you can use butternut squash also 2-3 eggs 2 tbls. honey Dash of cinnamon Blend in the blender until smooth, then spoon into mini muffin pan. Make sure the pan is well greased, and only fill about 1/2 full. Bake at 300 degrees for 30 to 40 minutes. You want them to be pulling away from the sides of the pan and look dry and browned around the edges. They will be delicate, so you will need to carefully remove them with a knife by cutting around the edges and carefully lifting them out. They make a good finger food and snack for school. Additional comment: I use coconut or grapeseed oil in my pans, then when they come out of the oven I loosen the sides of each button with a knife and then let them cool a little before trying to lift them out of the pan. Debbie Did you get the recipe a couple of weeks back for squash buttons by Debbie K. It does not use any nut flours and my boys just love it. I use muffin liners and they work just fine. Jenn & K asked: Just wondering if the recipe will work with pureed pear or apple? Debbie's answer: I did it with banana and they tasted really good, but they had a different texture than the squash buttons. I think probably any pureed fruit or vegetable might work with this recipe, but may be slightly different in texture based on the fruit or vegetable. If you use pear or apple, I would steam it and then drain it well on a dish towel to get as much water out as you can. Then, you could puree it with the eggs. You might want to use an extra egg just so it will hold together better. Just a thought. Let us know if it works. Debbie ============================ Another fruit button recipe This is my experience. I used the sneaky veggie pancake recipe from pecanbread.com. I used one cup of pureed fruit or veggie, 4 eggs, 1 tbs coconut oil, tsp vanilla and 1 tsp cinnamon and pureed together. Instead of cooking up like pancakes, I put it in the mini muffin tin and cook for the 40 minutes. Ours did come out like the squash buttons. Dana --------------------------------- Mock Nachos Ingredients: butternut squash nut butter or guacamole cubed chicken I cut the neck of a butternut squash in really thin circle slices, this was going to be pizzas, but turned into nachos. (We live in Texas.) Bake like squash fries, but for less time. Then I spread, macadamia butter or guacamole on them and sprinkle with cooked and cubed chicken. They look just like nachos and my son really liked them. Hope this will help someone else that is stuck on a limited food diet. Tricia =========================================== Soup with butttternut and steak I made this today, and it was delicious despite it being very basic. I pealed, seeded, and cut into small chunks a butternut squash. I cut cube steak into tiny, child's bite sized pieces, and threw them both in a pot with homemade beef broth. I simmered it literally all day long. By the time we ate it, everything was super soft. The meat was actually just as soft and tender as ground beef would be. The butternut squash did still hold its shape. Maybe you could use this for him since he loves soup. Meleah =========================================== Awesome " Chicken Nuggets " I just made the BEST chicken nuggets and Zack loves them so I have to share for all those picky eaters out there! He isn't ready for pan- fried foods so.... 1-First I made the cooked mayonaise from the pecanbread website, 2-Then I boiled a pound of boneless chicken breasts. 3-Finely chop the chicken in a food processor. 4- Mix the chicken, mayonaise, salt, and pepper to taste. (Basically you are making chicken salad) 5- Form spoonfuls of the chicken mixture into " nugget " shapes. 6-Bake at 350 degrees for 35 minutes. They come out crispy! Zack just loved them. Great dipped in homemade ketchup too! le " newbie " le, I made your nuggets and thinks they are fantastic! I was also able to make them with leg meat and with regular [homemeade SCD] (uncooked) mayo and not worry since it gets cooked when you bake them. Listmates are often looking for crunch early in the diet and this fits the bill--something that can be eaten soon after the intro and has crunch! Cut them with cookie cutters for interesting shapes if they won't try them at first. Deviled Eggs (not that my kids will touch them). Baked Pears are good - peel, slice and de-seed. Put in baking dish, sprinkle with cinnamon and a little butter (maybe a splash of pineapple juice), bake for 30 mins at 350F. Since they're left in whole slices the texture is different from pearsauce. Joan E If you make the Nut free dairy free bread, you can make grilled cheese sandwiches, egg salad sandwiches, french toast etc... I would blend 1/2 a ripe avocado with ground chicken in the food processor and make meat patties or meatballs. With chicken they turned out green so I told my kids they were martian burgers. If you also made some burgers/meatballs with cooked carrots and ground chicken they'd turn kind of orangey (unless you can find the red carrots). Then you'd have red (orange) and green meatballs. Festive for the Christmas season. I had them with a little homemade mayonnaisesince I didn't tolerate ketchup. I also made avocado buns with eggs (half avocado blended with 1 egg and panfried like pancakes in a bun size).
