Guest guest Posted December 5, 2007 Report Share Posted December 5, 2007 Hi, , Is it this one? 1 large acorn squash, peeled and grated 1 medium Gala apple, peeled and grated 1 small onion, chopped into small pieces 2 eggs Salt /pepper oil for frying Mix all ingredients very well. Heat oil in frying pan over a medium flame. Place a spoonfull of mixture in hot oil. Fry until golden on both sides. I don't make this, but I make the latkes in SCD With Taste And Tradtion without the bean flour, since it's been determined illegal. So it's just eggs and veggies. I find the key is to have plenty of oil on the griddle, reapplying after removing finished latkes. Also, cook until the edges are very brown before turning over. At first it's good to make them small (easier to turn over) but I've made them many times and now I can even have success with large ones.
