I'm looking for something for my 4yr old that may look like white bread or a roll. My non-SCD daug was eating a piece of bread and for the first time ever my son pointed at her and asked for bread. Not sure if it will help 6 eggs 5 cups almond flour 1/2 cup mayonnaise 1 cup seltzer 1/2 tsp baking soda Pinch of salt Preheat oven to 350F. Grease an aluminum foil pan with a bit of oil. Separate eggs. Beat egg whites until full and fluffy. Beat egg yolks in a separate bowl. Add remaining ingredients and fold egg whites into the mixture. Pour ino baking pan. (The batter should look like a standard cake batter.) Bake for about an hour and a half (more or less). Use knife to check if ready. Well, the first time I added a little extra dry curd, and less nut flour, and the rolls turned into a big sheet of bread. I cut it into squares, ate with a little cheese. yum. The second time I added the a little more nut flour and got flat rolls. It's early for the nut flour for me, but so far I've been tolerating it really well and haven't noticed any pain with it. Guest guest Posted December 7, 2007 Report Share Posted December 7, 2007 I think different people have different opinions about which bread is closest to bread we used to know. Here is one person's favorite: Try the Mixed Nut Flatbread on www.pecanbread.com but using only almond flour so the color is lighter. Cut the amount of baking soda so it's not so puffy. Then cut the bread in sandwich-bread-size pieces. If it's still too moist and not bread-like enough, freeze the slices on a cookie sheet. Then heat in the toaster. That will get some of the moisture out. In my case, I have never tried any breads with DCCC or yogurt. But of the recipes that don't call for either of those Cashew butter bread is my favorite. I think it's great and also it comes out great if you leave out the honey and/or the oil. Oh, I think it needs a little salt. Because of initial trouble I had with how it turned out, I bake it 1 hour 20 min. at 250 degrees.
