I hope others can enjoy too- Gingerbread House Dough 1 lb nut flour (we used hazelnut) 1/2 lb coconut flour 1/2 tsp baking soda 1/2 tsp salt 1/2 lb coconut oil 2 cups honey 2 tsp ground ginger (you could probably use fresh to be safe) 2 tsp ground cinnamon (you could grate a cinnamon stick to be safe) 1 tsp ground cloves (buy whole and grind in food processor to be safe) 2 eggs, beaten I mixed all the dry goods, then added melted coconut oil and honey. Then mixed in the eggs. I put the dough in the fridge to firm, then pressed into traditional gingerbread mold and baked according to directions. It comes out a bit soft at first (but I think all gingerbread does) then gets hard as it dries over a few hours. If you don't have a mold, you could probably roll out and cut the parts of a house. Bake at 350 for 25 minutes (assuming about 1/8th inch thickness). The Gingerbread House " Glue " 3 large egg whites 1/8th teaspoon salt 1/4 cup honey 1/2 tsp SCD legal vanilla Whip on high speed until VERY stiff. Use to assemble house- we air dried over night by our wood stove, but you can also put on oven safe sheet and " bake " at very low temp (120 degrees) for an hour or so until set. Use dried fruits, nuts, mini-gingerbread shapes to decorate- use more gingerbread house " glue " to glue on decorations. They will need time to air dry.
