Guest guest Posted December 8, 2007 Report Share Posted December 8, 2007 I have a friend who believes that Olive Oil prevents absorption/digestion of other nutrients and food when a person has inflammation. I am only finding evidence that CONTRADICTS this statement. (Basic physiology and current research contradicts it.) Has anyone experienced or read anything about Organic, cold-pressed olive oil being harmful or not-well-tolerated in people who have celiac disease or other small intestinal issues? The only negative thing I can find with Olive Oil that might make some people have a reaction is the possible high phenol content. But I cant find anything else that shows it to be ill- tolerated. The article also mentions that olive oil is very good for people with inflammatory conditions. One of the things that olive oil can do is keep your gallbladder running smoothly. A doctor told my co-worker to go on a crazy and extreme low fat diet, and he listened. The extreme low-fat diet ended up messing up his gallbladder completely, causing gall stones and eventually the complications were too much and he had to have surgery. So, I guess I wouldn't be surprised if some well-meaning doctor told her that fat is evil.
