We are also reducing carbs now so that we can do this a little more gradually. My question is: I am looking at making carrot curls. What oil should I use? This involved deep frying. Though it's expensive so you may want to mix half and half with something else. Guest guest Posted December 11, 2007 Report Share Posted December 11, 2007 Hi, , Most oils are ok. Elaine did not like canola or soy oils. You want an oil that stands up to the deep-frying. I personally don't deep-fry, but I have read that peanut oil and coconut oil are suitable. Please know that deep-fried foods are harder to digest. When you start the diet, you will want to stick with easier-to-digest foods until significant healing has occurred. I too, love olive oil but want to say it is not recommended for frying as it burns too easily.
