I am new to the diet (haven't yet started) and I am working on some

recipes so my son will have something to eat when we get going. We

are also reducing carbs now so that we can do this a little more

gradually.

My question is: I am looking at making carrot curls. What oil should

I use? This involved deep frying. All I know for deep frying is

peanut oil.

thanks!

extra virgin oil is what i use and it works great. Though it's expensive so you

may want to mix half and half with something else. Corn oil is legal too.

Hi, ,

Most oils are ok. Elaine did not like canola or soy oils. You want an

oil that stands up to the deep-frying. I personally don't deep-fry,

but I have read that peanut oil and coconut oil are suitable.

Please know that deep-fried foods are harder to digest. When you start

the diet, you will want to stick with easier-to-digest foods until

significant healing has occurred.

I think some people bake the carrot curls.

Pg 77 in Elaine's book she lists the acceptable oils for SCD use. I too, love

olive oil but want to say it is not recommended for frying as it burns too

easily. Safflower oil is more stable at high temps. when frying.
