I turned a bit orange when I was eating lots of sweet potatoes back when I was running a different elimination diet. It happened to my son also when he was a baby because he loved sweet potatoes. The only concern I would have is that if he is eating that much squash and/or carrots, he may not be getting a good variety. I'd increase the variety of some of the other vegetables. I think a yellow tint to the eyes can mean jaundice (liver problems), which would not be related to vitamin A. Otherwise I think he is probably OK. B.
