To All,

My name is Alan and I am a mere 2 days into the transition from

GFCFSF

to the SCD for my son Evan (5 yrs old). Thus far, I am very

encouraged

with the amount of pertinent information I have read in this group.

BTVC was very informative and has helped ease our transition

tremendously, thus reducing stress. And being an air traffic

controller...I don't need any more stress in my life!!

Anyhow, I wanted to draw upon the experiences in this group to see if

anyone could help me address a little issue I ran into today. I tried

to make my first batch of golden pancakes from the recipe contained

within BTVC, but it didn't go as well as I had hoped. They were

impossible to flip and would get overcooked on one side while I was

trying to flip them. HELP!!!

Hi, Alan,

I remember those days of crumbled and gooey pancakes. Make the

pancakes really small for easy turning. Use lots and lots of oil on

your griddle, reapplying it for each pancake. Possibly experiment with

your heat setting. After a while you will develop an instinct for how

to do this and you will be able to make bigger pancakes and use *a

little* less oil.

Here is what we do to make delicious pancakes using that recipe:

* very low temp (we have a gas stove so temp adjusting is easy - some people on

here have recommended an electric griddle)

* small / thin pancakes

* Ghee to " grease " the skillet - then I wipe the skillet with a paper towel

between every couple of batches then regrease.

- don't feel bad we burnt several batches before figuring this out - I think the

low temp & smaller pancakes were the keys for us.

I am new and this sound slike what happened to me last week. Now I start out

with higher heat and then switch it to lower heat once I pour the batter on the

pan. I make one large pancake at a time. so far no more problems! Good luck!
