Nut Flour Pasta

Can pasta be made using nut flour? If so does anyone have a recipe or

suggestion? My kids aren't really digging the squash noodles and I

have to admit that I kind of the miss the pasta myself.

Hi, April,

No, sadly, you really need the elasticity of gluten to make pasta.

Those who have tried just get a mess that falls apart.

How about a very thin omlette cut into thin strips? How about

egg-drop soup? I make something similar to the chicken cupcakes on

www.pecanbread.com and cut them into wide strips for a

chicken-flavored noodle.

Someone on the scd recipe creators list just posted how he makes

lentil dumplings that are steamed in a mold. The ingredients are kind

of advanced, though.

There is a recipe in the Grain Free Gourmet for pasta made out of thin

strips of squid. We haven't tried it yet, but it is on the menu for

next week. I am hoping that if I don't tell anyone it is squid, they

may not notice! Basically, you cut the squid into long noodle shapes

and simmer in the sauce for just 2-3 minutes. If you over cook it, it

will be rubbery. I think I will try it separate from the sauce, just

in case it gets a thumbs down, I won't have wasted a batch of sauce!

One of my scd cookbooks suggests using a veggie peeler to peel

zucchini " noodles " that you can steam off in the oven on a cookie sheet

(moisture will come out) and serve with sauce or make " lasagna " out of.

There is supposedly a gadget you can stick into the zucchini that will

make curls for you. I am looking arund in kitchen stores for it.

Please re-post if you find the zucchini tool...I'd be really

interested in giving that a try! and once my son starts, I'm sure he

would too. some of his favorite dishes are pasta!

We are doing very well with zucchini " noodles " -- peel

the zukes with a potato peeler, saute in whatever oil

you can use and add the topping of your choice. Also,

spaghetti squash has become a major hit in our house.

I think the tool you all are looking for is called a mandoline. I may

be wrong, but that's the name of the one I know about.
