It depends on the fruit. Fruit roll ups are usually made with

cooked fruit purees. Banana chips are usually ripe bananas (don't

use commercial banana chips become they aren't ripe prior to

dehydrating) Dried apricots are not cooked etc..

All dried fruit is more advanced then the same fruit either raw or

cooked.
