She says after freezing you will crack it with a hammer and screwdriver. Mine is delicious, but is more chewy and goey still after overnight freezing. What did I do wrong? Do you have a candy thermometer. I find it really helps since the moisture content of honey is variable and determining if it really is at the " soft ball " or " hard ball stage " can be subjective.
