using honey

Hello,

Can someone tell me why honey is legal when other sugars ar not,

and whether we should be attempting to use it in moderation. I notice

that many of the legal recipes use honey, and I had never used it " by

the Cup " prior to this diet. Thank you.

Do you have your copy of BTVC yet? Elaine addresses this chapter 5

p 27, 28 ch 9 pp 61 & 62

Basically, honey is a monosaccharide and is easily absorbed by the

body. It does not require digestion like sugar (sucrose) lactose

(milk sugar), maltose and isomaltose which are disaccharides.

Do you have issues with yeast? If yes, you may need to use honey n

note this only applies if you have yeast overgrowth.

Carolyn,

Honey might be legal but if you have a yeast overgrowth my Dr. told me not to

give it to him since it is a fungus or something like that.
