Elaine addresses this chapter 5 p 27, 28 ch 9 pp 61 & 62 Basically, honey is a monosaccharide and is easily absorbed by the body. It does not require digestion like sugar (sucrose) lactose (milk sugar), maltose and isomaltose which are disaccharides. Do you have issues with yeast? If yes, you may need to use honey n moderation.
