My son thought he'd help by starting the recipe yesterday. :~) He told me what he'd put in and I added the ingred. he hadn't put in. I also checked his measurement of flour as he said he put in 3 cups but it was really more like 2. Okay, we mixed the stuff up and of course you have to taste it before you bake it, and OMG this stuff is AWFUL!!!!! It tastes like someone poured a box of salt in it. He swears he only put 2 TEAspoons of baking soda and only 1/4 TEAspoon of salt. I am now wondering about the 1/2 teaspoon of nutmeg--is that a lot? Anyway, we added a little more honey (because he had only put in 1/2 of what was called for) but it still tastes nasty. Is there anything I can do to salvage this recipe? We are leaving tomorrow morning for my mother's and I wanted these to take with! Thanks! You should bake a couple of them and then decide. B. Guest guest Posted December 18, 2007 Report Share Posted December 18, 2007 Hello Cathe, I'm not sure about your batch of Christmas cookies but here is a really good recipe that tastes like shortbread, which is from an SCD website and another one for Russian tea cakes (Mexican wedding cakes). Christmas Shortbread Cookies 3 cups almond flour 1/4 tsp. baking soda 1 egg 1/2-2/3 cup honey 8 tbsp. coconut oil* Method: 1. Mix all the ingredients together, one at a time, until mixed well and it begins forming little balls. Refrigerate overnight. 2. Preheat oven to 225 degrees F. Roll out the dough between two sheets of wax paper or parchment paper. Cut into shapes using cookie cutters and place on a baking sheet lined with parchment paper. Bake for 15 minutes - watch them carefully and remove from the oven. The cookies are done when the edges are golden and cool for a few minutes on the baking sheet. Remove from the sheet and serve. Enjoy! Usually makes 2 dozen or more, depending on size of the cookies. *You can use cooking oil, such as sunflower oil, but coconut oil adds a nice buttery flavour. Russian Tea Cakes (Mexican Wedding Cakes) 1 cup coconut oil, or cut with 1/2 cup cooking oil, i.e. sunflower 1/4 cup honey 1 tsp. pure vanilla extract (just vanilla extract and alcohol or glycerin) 3 cups almond flour Method: 1. Preheat oven to 400 degrees F. Cream the honey with the oil, adding it slowly while mixing until thoroughly combined. Add the vanilla and almond flour, mixing until it becomes dough-like. 2. Line a baking sheet with parchment paper. Using your hands, take a some dough and roll into a small ball. Place on the baking sheet, flatten a bit, and repeat process until there isn't any dough left. As they bake, they'll spread a bit. Bake for 15 minutes or until golden. Remove from oven and cool. The cookies will be delicate and soft. Enjoy! The total amount of cookies depends on the size of the cookies. My (first) batch yielded about 18 or 20. I hope this helps you.
