coconut oil--is it okay to use in stage one?

I know coconut is an advanced food. But is it okay to cook with

coconut oil or use it in a recipe? Since my son has constipation

issues I thought the oil might be good for him if it is okay to use in

stage one.

Speaking of oils, I'm thinking of trying a couple of

recipes that specify a more solid oil, like butter.

Right now we're still dairy free so I don't want to

use butter.

Would coconut oil be a good sub? I also need something

reasonable, and I've seen some REALLY expensive

coconut oil. Also I know some kinds taste like coconut

and some don't so recommendations would be great.

Also does anyone use butter who was dairy free? I

remember reading that butter has very little casein

but I wasn't sure. I'm not thinking of trying it now,

but I wondered for the future.

I use ghee (clarified butter) and I know lots of others who are CF that do also.

I clarify my own. It costs much less than the store bought ghee and the flavor

is more intense. Clarifying it causes it to separate and you can skim off and

strain the solids from it leaving just the oil part of the butter. It has an

intense flavor that I love. The deal is the milk proteins are separated from

the oil and you use just the oil. Here's a link for a website that has lots of

info about it and nice pictures for those of us who are OCD about how

everything. I tried a few different ways to strain it, but finally found the

paper coffee filters laid inside a strainer after you skim the solids off the

top is the best way to get all the solids out better.

Hi, Diane,

Just a word of caution to everyone when buying unsalted butter, do

check the ingredients. I can't remember what they put in it, but

around here it has more ingredients than just cream, so I avoid it.

Yes, around here I have to get the Land O Lakes brand or an extremely expensive

organic brand. All the other store brands have " natural flavors " added

(illegal).
