Awesome " Chicken Nuggets "

I just made the BEST chicken nuggets and Zack loves them so I have to

share for all those picky eaters out there! He isn't ready for pan-

fried foods so....

1-First I made the cooked mayonaise from the pecanbread website,

2-Then I boiled a pound of boneless chicken breasts.

3-Finely chop the chicken in a food processor.

4- Mix the chicken, mayonaise, salt, and pepper to taste.

(Basically you are making chicken salad)

5- Form spoonfuls of the chicken mixture into " nugget " shapes.

6-Bake at 350 degrees for 35 minutes.

They come out crispy! Zack just loved them. Great dipped in homemade

ketchup too!

I made your nuggets and thinks they are fantastic! I was also

able to make them with leg meat and with regular [homemeade SCD]

(uncooked) mayo and

not worry since it gets cooked when you bake them.

Listmates are often looking for crunch early in the diet and this fits

the bill--something that can be eaten soon after the intro and has

crunch!

I make " nuggets " like this a lot, but I wanted to make something with a coating.

I don't know but I did make a plate of nice chicken nuggets using some partially

cooked butternut squash. I put the squash and the chicken in the food processor

until it was like a paste, then I formed little nuggets, fried them and salted

them. They didn't last long. The ones that were mostly chicken were favored, I

think they were about 1/3 squash to 2/3 chicken.

I did try coating with pecan butter. I put some pecan butter, zucchini puree,

salt, egg white (didn't really need this) and garlic in a bowl. I dipped the

chicken pieces into the batter and fried. They were really good. I usually make

nuggets like you mentioned, but this was a nice change.

Fried is just not a good idea for kids on the spectrum, right?

I wonder if these would be any good baked? I have my doubts. I'm running out

of ideas since my son can't
