What is DCCC stands for

DCCC stands for Dry Curd Cottage Cheese.

If you can't find it, you can substitute well-drained yogurt cheese.

I couldn't find it for the first four years of SCD.

Thank you Marilyn, now I remember knowing it. Actually, I know that

farmers cottage cheese, brand " Friendship " is good and legal, I hope,

this info will help you as well with more choices.

I now use Friendship -- but for the first four

years of SCD, there was NO place in New Orleans

which carried it. I asked, over and over, about

ordering it and was told that New Orleans was too

far for it to be shipped, that it went bad before

it arrived. (Not true, but I didn't have the

money to pay for next day air shipping from Wisconsin.)

However, after Hurricane Katrina, we were forced

farther afield for our groceries, driving 50

miles to Covington for fresh meat and vegetables

each week because the grocery store we formerly

patronized was destroyed by looters. In

Covington, I found a " Fresh Market, " similar to a

Whole Foods or Trader Joe's, which carried the Friendship farmer cheese.

Now, I call them on Monday, and ask them to order

a case of it for me (12 packages) and we go over

on Saturday to buy it. I bring it home, and stick

it in the freezer, and it lasts me for several months.

There are some recipes, though, which I developed

when I could only use yogurt cheese, that I like

BETTER with yogurt cheese than with DCCC.

Oh, that is terrible... I am glad you found a solution, I personnaly

love this cottage cheese. Also, if you have BJ's somewhere around,

they sell them too in a big containers.
