Agave syrup (or nectar) is about 90% fructose. It is a potent natural sweetener and a source of inulin, which is illegal, per BTVC p 59. Guest guest Posted December 21, 2007 Report Share Posted December 21, 2007 Agave is illegal for many reasons, but one of the most important ones is that agave nectar is not the only ingredient in those bottles! Here's what I found on a web site: *********** It takes 6 years to grow an Agave cactus to maturity and some of the manufacturers began adding fillers like corn syrup to make their supply last longer. If you look at the chemical analysis of other brands you will see sugars other than fructose and glucose. In Mexico, “pure” agave means pure agave is used in the blend, but is not the only ingredient. ********** So you could be unintentionally consuming high fructose corn syrup or who knows what else. Note it tells you to look at the chemical analysis, not the label! Unless you have a lab at your disposal and a chemistry degree, that would be hard! LOL! I personally am enjoying using small amounts of honey. Because agave is supposed to be low glycemic, I always found myself consuming WAY more of it than I should be anyway.
