Goat Yogurt: Temperature Over 43ºC

Hi,

Had no access to internet for a while. ...

I'm relatively new with the Excalibur and the Goat Yogurt. Firt few

times I made just 1 or 2 liters perfectly with fresh organic milk and

organic goat yogurt as a starter.

Due to the hollidays I had to order extra milk as there won't be

deliviries so I tried making 3 liters. But it seems not to be working

exactly right. I have 3 (microwave safe) plastic containers. The one

at the back of the dehidrator on the left hand side seems to have

exceeded the 43ºC temperature limit. It read 43.8 a while ago and the

one closest to the door didn't reach 38ºC after 3 hours and I gave up

watching it and went to bed. It eventually did get to 40ºC but of

course I don't know what time exactly that was as I tested it this

morning. That's not problem as I can start counting the 24hrs as of

this morning for that batch, but my question is: Is the yogurt safe to

eat if it passes a bit 43ºC??

BTW: The themometor I use is a digital themormetor for all sorts of

liquids and I measure the contents acording to your suggestions...

I think you can use the yogurt since it did not exceed 43C by very much.

I also use the Excaliber and have also often found that the back left

corner is a " hot spot " , and the front is generally cooler. Also if you

stack containers, the upper ones will be hotter, which is logical when

you think about it. This is why I only make 3 containers at a time--2

in front and one in back. Experience and several times of getting up

in the night to check temperatures have allowed me to find a setting on

my dehydrator that keeps all areas in the target range (but again, I

don't stack). I marked the setting on the dial with correction fluid.

I still check the temperature a couple of times in the first 3 hours.

Then I just let it be. It works well for me this way.

Since the heating element is at the back of the

Excalibur, I usually swap the positions of the

containers so that the ones closest to the door

for the first twelve hours are closest to the

element for the last twelve hours (or thereabouts) and vice versa.

I typically make four 2-liter containers in the dehydrator at a time.

I don't have a digital thermometer, but the

temperatures of all the containers stay fairly consistent this way.
