If you like or can tolerate poblano peppers (large, dark green and not hot like jalapenos), roast them like red bell peppers to peel the skin off, use a beaten egg to dredge in, use a little nut flour for a crust (or not, I do not) and fry in olive oil. I don't like the peel on poblanos anyway--it seems bitter to me. I used to like okra/peppers fried together. Any bell peppers would probably work for this also in place of the okra 'if' you wanted it fried. I never liked it in soups/gumbos so I can't think of a replacement. Marilyn may have comments on this also or ideas.
