I have now taken fruit away and its so hard. My biggest problem is finding something for him to drink his supplements in. If he drinks diet soda, that should be the one out first, but honestly, why wait? For an adult, going SCD really isn't that big of a deal. Make him snacks and meals to take with him and support, support, support. I thought my husband would never give up rice, ice cream or chocolate. He is at two years on SCD and going strong. Hmmm, one night I had meatloaf with spinach and garlic in it, I think. We had zucchini and carrots that night as well. One night I made baked chicken seasoned with salt, pepper and paprika, and served with carrots, beets and green beans. I also made pork steaks with apple. He's had our muffins (from BTVC). And our applesauce. Last week I made 'pumpkin pie' without a crust and from butternut squash. He loved it, and my mom wants the recipe!! I try to keep things simple for my sake, and colorful for their sake (appealing as well as variety). My kids are always saying how great everything tastes, which just blows me away, because they were all so addicted to starches not so long ago... Secondly, he has bowel issues that will send him to the bathroom sometimes several times a night and he doesn't want to be doing that at work (if things get worse when he begins the diet) when he's supposed to be supervising machines/people. He's at a new job and can't afford to miss work. I think, for him, going SCD *will* be a big deal. I've slipped in SCD foods as I can with him, but I cannot expect him to just jump on board. He's not that kind of person (although he does want to ease into it) and it's not like he's my child where I can say, " This is how it's going to be.
