I'm glad to know that others go through the same process etc. I am now " getting to know " my Excalibur and itching to do more with it, but at the moment I'm still with the yogurt only at this stage. I'm still hesitante about eating that yogurt which was almost at 44C (43,8C). I'm still on low dose of meds and well....etc. Luckily my husband loves the goat yorgurt and will be overjoyed with a liter for himself! I also use the Excaliber and have also often found that the back left corner is a " hot spot " , and the front is generally cooler. Also if you stack containers, the upper ones will be hotter, which is logical when you think about it. This is why I only make 3 containers at a time--2 in front and one in back. Experience and several times of getting up in the night to check temperatures have allowed me to find a setting on my dehydrator that keeps all areas in the target range (but again, I don't stack). I marked the setting on the dial with correction fluid. I still check the temperature a couple of times in the first 3 hours. Then I just let it be. It works well for me this way.
