Bones from 1 chicken 1 med onion, coursely chopped 2 ribs celery handful of baby carrots, roughly chopped 1 bay leaf 1 teaspoon salt ( add more salt when using for other recipes) pepper 2 cloves garlic if you choose ( I don't) I'll add garlic to final preparation of food Add COLD water to cover and then simmer for several hours 6-8hr (min 4hrs). It is vitally important to use COLD water and not hot water. It was on an episode of " Good Eats " . If you use hot water, it will prematuraly seal all the small (pourous) bones and all the healthy stuff will NOT come out. If you cook with the skin on, it will turn more gelatinous(sp) when cool. > > > > PS.
