I think anyone would agree that replacing gluten with starch and making no attempt to get the proper balance of meat, fruits and veggies in can't be good. Is that what the SCD folks are referring to or am I missing something? Colleen: With a celiac in the family diabetes and other autoimmune threats are always a concern. How have you figured out how to cook with it? I make occasional coconut cookies (for cake subs at bday parties) and cannot figure out a way to get stevia in there. Any thoughts?
