My (coeliac) neighbour has a problem with sugar as well, so it means cakes are out of the question. It depends on each person and whether they can tolerate the individual ingredients. Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 All those ingredients are OK (from Coeliac UK's food list which is probably the book your colleague uses) including the Cointreau, vanilla exctract is OK, I take it the eggs are doing the raising? The baking powder might be a dodgy area if you use it (but you don't mention one) as many baking powders contain wheat flour to add bulk. The Lurpak (and all butters) is gluten free. Sounds heavenly!! Please can I have the recipe?! Maybe I'll do it as my Christmas cake this year. Thanks Caro. Apparently it's designed to sink in the middle so yes, eggs will do what raising there is. Then the hollow is filled with double cream whipped with the Cointreau and orange zest.
