Guest guest Posted November 13, 2001 Report Share Posted November 13, 2001 Just looked at my calendar and realised that I am due to have my friend over for lunch tomorrow.. I also however have to wait in until 12pm for a delivery so cant really get to the supermarket.. So had a rummage through freezer and fridge and I have got some chicken thighs (now defrosting) carrots onions (red ones) green beans potatoes and some smoked bacon.. Now everything screams risotto for this with me but problem is that I made this for her the last 2 times she was here.. would like to do something else.. Oh and she is also wheat intolerant so... Any idea's??? please ;o)... (wish I could just order pizza lol) Lonnie mama to Phoebe and Eloisa and expecting a Christmas delivery.. Chicken & bacon casserole ******************************** brown onions, bacon (chopped small)and chicken pieces add chopped beans, carrots pour in water or stock bring to boil (if you have a tin of tomatoes this would be a good addition here too) shove in oven for couple of hours serve with boiled or mashed pots yum Angi Quote Link to comment Share on other sites More sharing options...

Cook the potatoes first, chop them up and fry crisply to scatter over the top, with the bacon grilled to a crisp and snipped up too. Or maybe coat the chicken (strips) in breadcrumbs and fry, serve with a cold potato salad (diced boiled potatoes, strips of red onion, lightly boiled beans, grilled/snipped up bacon, and I would add an egg to the salad - either hard boiled and chopped or poached and put on top so the runny yolk acts as a dressing...mmmm drool..!! Take chicken of the bone in as close to one piece as possible. Wrap in the bacon. Braise in oven/covered pot. Cook veg as per preference. (If you have some tomato, chop onion and put the two together as a sauce). Spent a whole summer constructing this dish (amongst others) as a student (hotel mass catering) - but will admit to being vegetarian so have no idea what it tastes like! I'm a great believer in one pot cooking. If you slice the potatoes thinly and put on top of the casserole they go a lovely crispy golden brown - just take the lid off for the last 30 mins of cooking! Altered immune system during pregnancy. I gave up boiled eggs but not fried - just did them both sides. And the situation now is slightly different with hens being vaccinated.
