Guest guest Posted May 13, 2003 Report Share Posted May 13, 2003 Thaw, rub with salt, pepper, thyme, rosemary? place in shallow roasting pan, add 1/2-1 cup water or broth of your choice, roast 325 for 2-3 hours. If it smells like something other than beef, use a meat thermometer, or until not pink. Make gravy with whatever juices it gives up. Add oven roasted veggies ... cut up in chunky fashion onions, carrots, potatos, etc toss with olive oil, salt and pepper, place in oven with roast for the last hour, stiring every 15-20 minutes or so. Leftovers? Make hash. Dice potatos and onions and sautee in olive oil, add diced meat and a little broth and pepper.
