Guest guest Posted May 28, 2006 Report Share Posted May 28, 2006 Yogurt maker- I love my Yogourmet. I can make two quart batches.... or one quart, if I want. It's simple, reliable, and I've never regretted the purchase. I bought the extra batch jar so I can start a new batch before we are finished using the last one. Any yogurt maker will do.... but you will probably want one that has a single batch container (not a bunch of little 6 oz ones in a row).... and you'll want to make sure it doesn't automatically shut itself off after 4 or 6 hours. The Yogourmet is just ON.... until I unplug it. I put a sticky not on top of the lid to remind me when to take it out. Starter- Either of the two you previously mentioned are okay. The Progurt or Custom Probiotics. I have not personally used either one, I use Yogourmet/Lyosan, because my daughter tolerates cow milk yogurt. Goat Milk- Meyenberg is fine to use. It does not have the greatest taste (in my opinion).... but is often the only one people can find in their local stores. Trader Joe's in my area used to carry a brand named Summerhill Farms, which I thought was better than Meyenberg- made a thicker, better tasting yogurt. I don't know if they still even carry it. Raw goat milk from a local farmer might be preferable..... you'd just have to try, if you can locate some. I think almost everyone here would jump at the chance to get good, fresh, raw goat milk from a local farm. It's just not available for most of us. With any of these milks, the yogurt making process is exactly the same. Hope that answers your questions.... The Yogourmet sounds like a good choice and I'm going to try to get the fresh raw goats milk if possible. I do have a follow up question on the starter. Have others that were previously dairy-free tried the Lyosan? We do not have a true cow milk allergy but have been avoiding dairy since we were previously GFCF. I am open to trying a dairy starter if others have had good results. Also, does it require refrigeration as I am concerned about it remaining cold since it would need to be shipped to me in Florida. It *should* only be an issue for those who have really definite reactions to cow dairy. I think all the yogurt starters are recommended to be either fridged... or kept in the freezer. I'm sure it could be shipped with a dry ice packet, if necessary. Guest guest Posted May 28, 2006 Report Share Posted May 28, 2006 Personally, I prefer my EuroCuisine yogurt maker... it comes with 7 individual 6 oz glass jars (with lids, to put on after the 24 hour fermentation)... and I ordered an extra batch of 7 glass jars. I ordered mine online at www.cooking.com with a gift card (timing was everything). To make my yogurt, I use the Dannon plain (whole) yogurt, plus organic whole milk. To make the yogurt thick, I scald my milk (bring to a boil, until it starts creeping up the sides of the pot)... Then let it cool to room temperature, er rather, I believe 84 degrees (it's in my directions upstairs, came w/ the yogurt maker)... then mix w/ 6 oz of Dannon yogurt... It's very simple... the directions that come w/ the yogurt maker are a great aid, but I just use the number dial on my yogurt maker to let me know what time the next day to turn off, put on the lids, and chill 'em. Tastes a'kin to Sour Cream, so it's great on mexican dishes too . You can also mix it in with your scrambled eggs for extra zing, if you like it... my son prefers them w/out anything other than salt and pepper. LOL I love the individual jars because of the lowered risk of contamination once you open the jar... it becomes a bit runny once opened and dipped into once, so the smaller jars mean the rest of the jars are left unopened... less to get runny as quickly .
