In the past coffee has always given me jitters and I could have one cup in the morning and not get to sleep until 2 the next morning. Don't through rocks but I take excedrin. It has caffine in it and doesn't do this. My get up time is normally about 5:30 and I go until about 11 to 11:30 in the evening so I have done this to be able to keep this up. I have known it is not a good choice but have not known what to do to change it. Your organic coffee might be the ticket. Buying it at Sam's do you have to get a 50 # bag? It is in bean format so you have to grind it. It used to be about $4 a pound (U.S.). In Canada it is $13.49 a bag in Canadian dollars, a steal! Another thing to consider is making it with an espresso machine. The process of espresso.... forcing the water through the grounds very quickly, under pressure.... actually produces a product that has less caffeine, serving per serving, than dripped coffee. The grounds are not in contact with the water as long as in regular drip coffee makers. Yes, it's very strong.... but then you can add extra hot water until it's as dilute as you want. ANyway, it's a misconception that espresso has MORE caffeine.... it actually has less. I also find that there is something else about non-organic coffee that bothers me.... not sure what it is. I don't know what nasty pesticides are sprayed on the it while it's growing... but since most coffee is grown outside the U.S. or Canada, there are far less restrictions on the chemicals they're allowed to use. I swear I can SMELL pesticides on regular beans... and I wonder about mold inhibitors, too. Could those things be giving us the jitters?? Anyway, I figure it keeps the growers and pickers safer, too... if they are not having to work with the pesticides, and it doesn't end up in the ground water in their community. I also like to buy " Fair Trade " coffee... when I can, as the employees on those plantations are paid a fair wage. Makes my coffee more expensive... but I drink less and enjoy it more. Conventional coffee crops are among the highest treated with pesticides. That's what you don't like! The brown Melitta filters extract acidic oils from the coffee which give some people heartburn.
