Yogurt starter must contain at least S. thermophilus and L. bulgaricus. L. acidophilus and/or L. casei are okay to have in the starter also. I just thought it would be easier to get the extra acidophilus through a local source (even if it is $12.99 for a bottle) than going mailorder, which for some reason I am loathe to do, especially if involves customs and ordering through the states and using a credit card. They will speak French to you. Just start talking in English and they will switch. Lyosan is a Canadian company. I live in Newfoundland, so I order my yogurt starter from them. You can get a legal acidophilus supplement also along with other items. The last time I ordered it was $10.95/12 (10 g)packs of yogurt starter and $9.25 for 90 acidophilus capsules. I order through email. You should be able to get the order forms from lyo-san@...
