I thought only women over ninety still made chicken soup ;-) Sometimes after the intro, I didn't like my soup or the mess of the shredding chicken and floppy boiled vegetables that had to be fished out of the stock pot. Lo and behold, the Kosher area of our supermarket started offering packaged Chai entire one piece chicken rib cages. They made a nice bony stock that Summer would be proud of. I make small batches of chicken soup more often. I use some in the Risotto recipe and here's what I do to the rest that is yummy. Add some thinly sliced leek bulb, parsley, a squeeze of lemon and a cauliflower-ette and simmer this all in a small pot in about one and a half cups of soup. Add a drop of freshly ground pepper and have the soup with a salad and it's a meal. The soup is very gourmet-ish and filling. Carol F.
