The Globe or French artichoke has many layers of tough leaves and is green. Guest guest Posted June 20, 2006 Report Share Posted June 20, 2006 The artichokes you have seen ARE French, it is the one called " Jerusalem artichokes " that aren't SCD legal, I think they are a tuber that looks quite different. We eat artichokes all the time, usually from Trader Joe's. Cut off the top third and the stem flush to the base, boil until tender, dip leaf ends and the " heart " in mayonnaise, yum.
