I was looking at my old " hurricane " box and there's not a thing in there we can have; so as I try to prepare a new one, I find there's not much I can fill it with. Guest guest Posted June 25, 2006 Report Share Posted June 25, 2006 Wyndie, Probably the best thing to do would be to find someone who can teach you how to can foods. That way you can prepare SCD legal foods and can them yourself. It's not really hard to do, just somewhat time consuming, but since you live in a hurricane prone area, it seems that it would be a really good skill for you to learn. If you can handle eating nuts and dried fruits, those could be stored and replaced periodically to keep fresh ones available in your emergency kit. Guest guest Posted June 25, 2006 Report Share Posted June 25, 2006 Hi Wyndie: I agree with the canning suggestion. I do canning myself and was self taught. You can learn alot from canning cookbooks. I recommend you get the " bible " of canning: The Ball Blue Book. Your library may have it or be able to get it. Try to find recipes that don't use sugar, but rather honey. Be careful because some items may be safely canned in a boiling water bath (like many fruits and jams and pickled items), while other items need higher temperatures to be safely canned (like many vegetables), and require a pressure canner. I know it is an expensive suggestion, but my other thought was to consider buying a generator for such an emergency. It may be the least disruptive option, assuming of course, that you are not hit by a major disaster like katrina (God forbid), but only enough of a disaster to knock out your power for awhile. If you use them and don't have a problem, I'll laugh with you not at you. It's just that the type of honey is a concern and the fact the coconut could be sweetened. Also do you have any idea how easy it is to make SCD Macaroons? My only problem with them was how many I used to eat. Just to be safe, why not call the manufacturer and double check the nature of the ingredients? I hope they turn out to be " legal' and they are probably very tasty. > > Carol F. I personally would not buy canned tuna... for a number of reasons, one being that they often include " broth " as an ingredient, which can contain any number of illegals, but also MSG. I have found that canned salmon has only fish, salt and water. I also read that all canned salmon is wild caught... and is usually canned immediately at canneries near where the fish are caught. Now, I know that doesn't address the issue of mercury.... and some won't want to use fish at all... but remember, we're talking about food for emergency use. Commercial nut butters would work. You could also do some dried foods, if you have a food dryer.... then package them in vacuum seal bags. You'd want to rotate those kinds of things annually.
