Dear Pearl and all who want to buy meat, I have noticed that others

have noticed that organic and natural sometimes doesn't

taste " right " and is tougher and more lean.

I learned something a while ago. We received 1/4 steer from my

father in law. He use to raise a few steer. His where grass fed

and alfalfa fed, and then fattened only for a very short time at the

end on corn. It all tasted " gamey " . I did not like it. I have

asked others why. And they have said that it is because they ate

too much alfalfa and where not on " grain and corn " long enough at

the end before butchered.

I have done research into this. The omega 3's are what make it

taste gamey and look very RED and lean. In our store raised meat

when we fattened the animals on corn and grain in the end, it

changes the type of fat. It makes the meat more tender

and " marbled " and takes away that gamey taste and we all have

learned TO LIKE IT. It also makes the meat more " pink " .

So, if you want healthy meat balanced in omega 3's and free of

hormones and antibiotics we may have to adjust to the taste and the

tougher yet leaner meat, that is higher in omega 3's/that most of us

are defecient in.

Yet, I also know that if it was not ever fed alfalfa that it tastes

better! WE have bought organic/natural grass fed buffalo that never

ate corn or alfala and it did not taste gamey. But it STILL is a

little tough. A roast has to cook slolwy after being marinade to

make tender. We usualy buy more hamberger made from it to avoid

this problem.

Think of a deer or elk...it tastes " gamey " . But this is what nature

intended...and it is a little tougher and very lean and red (high in

omega 3's), and needs special preperation to taste right.

Yes, the thing about grass fed is it is a different taste, but like you said, we

have all been trained to like grain fed.

Our family has been on grass fed & grass finished for over a year and definitely

are enjoying it...can't stand the taste of store bought anymore, you can tell

the quality of the meat.

Also, when cows are fed grain their bodies are not meant to process it, they are

meant to eat grass, this feeding of grain wrecks their systems and causes them

to get sick and need antibiotics.

Feed lots are a relatively new phenomenon, after the WW the US had an excess of

corn and soybeans that they weren't able to export [or something like that] and

so they established feed lots. With feed lots the cows are fattened up in a

matter of months, whereas, in the natural process of a grass fed animal it can

take up to 2 years to be ready.

Along with Omega 3's there are also ALA's [good for your blood, not heart

clogging] and vit. A that they get from the grass. You can really taste the BEST

difference in the hamburger! When we have friends over for burgers, they are

always saying 'this is the best burger I've ever had'.

The fat is different on GF cows.

Remember the days when they used to run cattle? Ranchers....ie Lonesome Dove,

Open Range? :0)

The cow we bought had a hang weight of 800lbs [that's huge!]. We get our meat

from a place called www.skagitriverranch.com

These guys are a little more expensive than most, but you throw it in the

freezer and you've got beef for a year, the cost isn't so bad when you spread it

out like that.

it is very expensive...BUT we look at it as most folks spend alot of money to

make their outside look good, while their insides are dying...I'd rather spend

my money on health for my family and get second hand, hand me down, garage sale

clothes. There was a grass fed beef article in TIME magazine, I think the June

12th, 2006 issue.

We spend our money on meat, fruits and veggies aren't that spendy..and you've

got your food.

A VERY GOOD POINT THERE abo.

I thank you for what you wrote about the meat being healthier than

feed lot meat. It was excellent.
