If I make home-made sunflower butter or macadamia butter, I assume I need to roast them first, yes? Will I need extra oil to process them with? (I can buy macadamia nut butter at the hfs, though it's expensive). Any recommendations for time and temp for roasting these? How will I know when they're done? Sorry, I'm a pretty experienced cook with lots of exotic ingredients, but not nuts. And I don't want to do a lot of trial and error, as the macadamia nuts are $17/lb. Suzanne, I don't see why you would have to roast them first. But if you want to roast because you like the flavor better, just type in " roasting nuts " on Google or Yahoo; maybe add " + recipe " .
