I put the unsweetened coconutmilk brand in and then after we're done I see it contains guar gum which is illegal. (although the " ice cream " was fantastic). I wonder where to get pure coconut milk outside of having to buy coconuts and crack them myself ... Does this mean we also have to start over on the intro diet? Guest guest Posted August 6, 2006 Report Share Posted August 6, 2006 I have not found any brand of coconut milk that does not have some kind of emulsifier/gum that binds the coconut milk together, as it naturally separates. The best homemade coconut milk is from fresh coconuts. It's a great activity to get the kids involved in, as I put them to work cracking open the coconuts! It's also better if you save the coconut water and use it to make the coconut milk. But if you don't want to fuss with that, you can use dried shredded coconut.
