Kim, how are you doing with the cultured butter????? Any strange reactions or

behavior???

Dose anybody know about the DRY CURD or the Cultured Butter????? Or regular

butter for that matter. Is it denatured casein, and thus safe for us who have

casein sensitivity?

From Elaine Gottschall:

When we make yogurt and the pH falls to about 4.5 rather than 7.1-2 (as in

fluid milk), the proteins are denatured which means that because of the acidity,

the proteins lose their 3 dimensional structure (sterochemistry) which would be

the reason allergists worry about casein. In yogurt and in the natural cheeses,

the casein is denatured into a two-dimensional structure which would be less

likely to cause allergic reactions.

I am 99% sure that I read a post that Elaine said to eat cultured butter if you

could. But it was when I was reading loooooots of posts so I don't know which

forum it was on. Pearl

WHAT IS CULTURED BUTTER? And does anyone know if the DRY CURD is fermented

enough to render the casein harmless. Or is anyone using the dry curd who " was "

casein sensitive. How are you doing with it and please state your time on diet

when you introduced it.
