Does anyone have experience with this? I am trying to determine what is better to freeze and what is better to can...and when I can items what can be put in with it if anything. I just bought a Kenmore Food Saver with bags and containers. Any helpful hints are appreciated. I can pickles and usually the rest of my fruit I make into fruit leather ( I have a dehydrator). I have made grape juice out of concord grapes as I have a stove top juicer as well. Guest guest Posted July 26, 2006 Report Share Posted July 26, 2006 To freeze blueberries and other similar fruits... I wash them very well, and lay them out on a pizza pan or cookie sheet to dry, might want to gently run a paper towel over them. When the water has dried, I set them and the pan in the freezer. When the blueberries are frozen, I will them bag them up in a freezer bag. The only freezer bags I will use are Natural Value, they are cheap and do not contain polyvinyl plasticizers, and work equally well alongside any other freezer bag. If you haven't canned before, I would get used to it by sticking with high acid foods like tomatoes, tomato sauce and pickles, then move onto canning other foods. I prefer to freeze my berries and fruits, I do this in small batches with small bags so I don't have to yank big amounts out of the freezer come winter. For peaches, I blanche them quickly, makes the skin easy to peel off, cut in half, remove pit, then make whatever size slice you desire and freeze. For greens like chard or spinach, I quickly blanche them, dry them a bit then bag them. Using small bags for all this work is the height of convenience when you prepare meals and need to dethaw stuff in the future. I see it as alot of work now, but this winter, it will balance out with little kitchen work and prepared local food. The best plastic containers to store in the freezer are plastics number 2 and 5.
