The red/pink, de-hulled ones would be far, far superior to begin with because they would be easier to digest. Even with that said, lentils are not a beginner food... and should be started some months down the road. Red/pink lentils take much less time to cook than the others, too. Patti Lentils I see that lentils are allowed on the legal list but all the recipes in the books call for red lentils. Are regular lentils ok? Guest guest Posted June 18, 2006 Report Share Posted June 18, 2006 The standard lentils, that are greenish-brown on the outside, have a fibrous " hull " , an outer coating. If you were to remove that hull, you would see a pinkish, reddish inner lentil. Much faster to cook and easier to digest.
