Many of us order almond flour from Lucy's Kitchen Shop. www.lucyskitchenshop.com .. Her business is exclusively dedicated to SCD. Her almond flour is especially good... and pretty reasonably priced if you order 5 lbs or more. She's located in Washington state. The other " staple ingredients " are really mostly just whole foods.... fresh veggies and fruits, meats, eggs, milk to make yogurt (for those of you who can tolerate dairy... and most here start with goat yogurt because of cow dairy issues). Aside from the almond flour, and yogurt starter (also available through Lucy's... and elsewhere by mail order), you don't really have to have access to a health food store as we can't use many pre-made commercial foods. It's a lot of cooking-from-scratch around here. For yourself, the biggest change might be that you need to start SCD on peeled and cooked fruits (except ripe banana) and veggies. Patti Lots of Issues-want to try SCD I have an almost 12yr old boy who is severely autistic. He is limited in what he can eat. He's been GFCF for several years & doesn't eat anything that requires using a spoon (texture issues I believe). My second son (8) has mild asperger's & sensory issues & is not on a special diet. May have environmental allergies (stuffy nose; snores). My 4yr old daughter has severe tree nut allergies & is intolerant to dairy, but is okay with coconut & almonds. She seems to have environmental allergies as well (dark circles; stuffy nose at times). The baby is 1 & had severe eczema his first year. He is still nursing, eating very few solid foods which are just baby mush foods yet & basic ones, & cannot tolerate dairy, *any* grains, potatoes, & takes certain vitamins every day (they all do). A big help for him & my daughter & myself has been cod liver oil. I am on the restricted diet above which I started because of nursing my son. However, I have epstein barr, chronic fatigue & have tested positive for candida & bacteria issues. It was recommended I try SCD, since I'm " almost " on it already, instead of a typical candida diet or raw food plan (I eat a lot of raw foods right now). I use coconut oil a lot in cooking & raw. I know this will be challenging. The biggest question I have is what are the staple ingredients - like I believe almonds & almond flour are big ones. How do you keep the amount needed in? I'm in the country with limited access to a decent health food store. Sometimes when I get there the bulk almonds are almost gone. I'm concered about being able to keep up with it. I don't like cooking & have little time for it (the kids are homeschooled so I don't have free time at all). I don't use a lot of junk food, I just cook simple & easy. Burgers, roasts, roast chicken, steamed veggies, etc, are the way we eat mostly. Pretty boring actually! We're intolerant to dairy, so I probably won't try that for quite a while, even with goat's milk. The other major challenge is my kids are always wanting to snack. Especially my autistic son likes his corn & rice chips, GFCF pretzels etc, which are all no good. He hardly eats any fruit because of gut issues (gets diahrea) & limited steamed veggies. So I'll be needing snack ideas. I have a dehydrator but only tried it once (didn't work out too well so I need more practice!). " We mostly use the nut products for baked goods and Elaine Gottschall was careful to caution aginst excessive nut consumption in the form oif baked goods or nut milk. Carol F. I love to cook, and used to be a bit more gormet than I am now. We've gone pretty simple since starting scd. We do a lot of burgers, baked chicken, steamed vegies, ect. now. I think that you'll find that a lot of help will come simply from switching to pealed, cooked fruits rather than raw. You can try doing some simple bulk cooking like making a couple of roast, slicing them, and freezing them in their juices to keep them moist when thawing and reheating. I also do a fajita marinade with a huge amount of chicken. Then, I grill it all, and freeze it. Stuff that like is good for things like the days that we're on a field trip, at our co-op, ect. It sounds like you're family is on the right track. You'll just have to give up the grains, and cook the fruit. I hope it goes well. Prayers your way.
